This is one of the meals I prepared for Mina. I bought the plate to make her meals more visually appealing and also to help remind me that there are spaces for all food groups. That’s chicken strips, broccoli with cheese, rice, blueberries and ketchup. She ate almost all of it except…the rice! lol Daddy would approve.

I don’t really cook. I never really have considered the kitchen as my forte. I know how to cook a few dishes, I bake some but for the everyday cooking I leave it to hands better equipped than mine. But I am responsible for Mina’s meals at times. What do I feed her when Dad hasn’t cooked her favorites of pasta, or some type of meat-based dish with rice? I have to whip up something. Here’s one of my quickly put-together lunch:

This wouldn’t pass Dad’s standards but it has turkey from the deli counter, so not processed. It has a sald, carbs, fruits on the side and a nice cold glass of milk. Good enough for me, and delicious according to Mina.
